Easy Peasy Lemon Squeezy Lemon Blondies: The Perfect Easter Treat | Math and Language & Literacy Snacktivity

Let’s have something refreshing and tangy for this Easter Snacktivity! We’re making Easy Peasy Lemon Squeezy Lemon Blondies! Like our brownie recipe, this is a quick and easy one-bowl recipe. Not to mention it provides great opportunities for counting, literacy, language, and fine motor practice! The recipe ingredients and instructions posters are included in this post. Print them out to refer back to as you make your Lemon Blondies! By doing so, your child can associate meaning with print, and get them ready for literacy. Ingredients

For the blondies:

  • 1/3 cup softened salted butter
  • 3/4 cup sugar
  • 2 eggs
  • 3 tablespoons lemon juice
  • zest of 2 lemons
  • 1/4 teaspoon salt
  • 1 1/4 cups all-purpose flour
  • 3-4 drops yellow food coloring (optional)

For the icing:

  • 1 cup powdered sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon milk

If you prefer a less tart or sour blondie, omit the lemon juice in the icing and use only milk!

Instructions

  1. Preheat your oven to 350°F or 176°C.
  2. Prep your baking pan by lining parchment paper or using non-stick spray.
  3. In a large mixing bowl, beat together butter and sugar.
  4. Add in your eggs one at a time. Count together with your child as you add the eggs in!
  5. Once combined, mix in the lemon juice, lemon zest, salt, and flour. Stir until just combined. Be careful not to overmix your batter!
  6. Pour your batter into the prepared pan and smooth the top with a spoon or offset spatula.
  7. Bake for 20-25 minutes or until lightly golden brown.
  8. Prepare the icing as the blondies are baking by combining the powdered sugar, lemon juice, and milk.
  9. Allow the blondies to cool before icing.
  10. Cut into squares and enjoy!
